Remark

腌制Seasoning for marinating:
羊蝎子1kg,1kg lamb spine
生抽2大勺,2 tbsp light soy sauce
盐1小勺,1 tsp salt
黄酒2大勺,2 tbsp Shaoxing wine
花椒粒1大勺,1 tbsp szechuan pepper
底料Saucepan bottom:
植物油5大勺,5 tbsp vegetable oil
香油1大勺,1 tbsp sesame oil
黄豆酱2大勺,2 tbsp soybean paste
红腐乳1块,1 piece red fermented bean curd
蚝油1大勺,1 tbsp oyster sauce
糖2大勺,2 tbsp sugar
草果1个,1 tsaoko cardamon
小茴香1大勺,1 tbsp fennel seeds
孜然1小勺,1 tsp fennel seeds
八角2个,2 star anise
桂皮1片,piece of Chinese cinnamon stick
香叶3片,3 bay leaves
陈皮1大片,1 piece of dried citrus peel
砂仁2个,2 fructus amomi
干辣椒一把,handful of dried chillies
白胡椒粒2小勺,2 tsp white pepper
花椒粒1大勺,1 tbsp szechuan pepper

1/4 of cabbage
4 Fushan lettuces
Shiitake mushrooms (as you like)
King oyster mushrooms (as you like)
Japanese soup stock (Dashi)
3 tbsp of miso
1 tbsp of Korean spicy sauce
600g Kimchi 600g
Frozen tofu (as you like)
Mushroom pork ball (as you like)
Golden fish balls (as you like)
Baby corns (as you like)
Needle mushroom
Pork belly slices (as you like)

高湯食材:
日式高湯包
味噌3大匙
韓式辣醬1大匙
老泡菜600g
食材:
大白菜1/4顆
福山萵苣4株
香菇幾朵
杏包菇幾個
凍豆腐幾個
香菇丸幾個
黃金魚丸幾個
玉米荀幾個
金針菇1把
豬梅花肉片幾片
作法:
1.將高湯煮開(亦可使用高湯包),放入味噌和韓式辣醬,煮勻後加入老泡菜,煮開試試看味道。
2.將大白菜放入煮到稍軟後再依序放入準備好的食材; 慢慢享用。

600ml Dashi Stock (2.54 cups)
2 tbsp Sugar
2½ tbsp Sake
2½ tbsp Soy Sauce
Shichimi - Seven Flavor Chili Powder
Frozen Udon Noodles
Optional: Aburaage and Tofu

Kombu Seaweed (10x10cm / 4x4 in)
10g Bonito Flakes (0.35 oz)
800ml Water (3.38 cups)
